500g potatoes, peeled
40 to 50g plain flour
about 1/2 teaspoon salt
1 egg
1 pinch ground nutmeg
pepper, to taste
60 to 80g butter or oil

Steam or boil potatoes in salted water until soft. Peel then push through a ricer while they are still hot. Let cool.
Sift the flour and salt over the cooled mash and mix well. Make a hole in the middle of the mash, add the egg, nutmeg and pepper and stir until well combined.
Form the potato mixture into a log and cut discs about 1cm thick and press flat (reshape if necessary).
Heat butter or oil in a non-stick frying pan and fry potato cakes for about 5 to 10 minutes on each side, until golden brown.
