SIMPLE CREPES



INGREDIENTS:

1 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
C&H Pure Cane Granulated Sugar 4 Lb
$1.78 for 1 item thru 11/12
1/4 teaspoon coarse salt
1 1/2 cups whole milk
4 large eggs
3 tablespoons unsalted butter, melted

DIRECTIONS:

1 Put the flour in a bowl with the salt and sugar.
2 Make a well in the middle and pour the eggs lightly beaten with a fork.
3 Start gently incorporating the flour with a wooden spoon. When the mixture becomes thick, add the cold milk little by little. One can use a whip but always gently to avoid lumps.
4 When all the milk is mixed, the dough must be quite fluid, if it seems too thick, add a little milk. Then add the melted butter, mix well.
5 Cook the pancakes in a hot frying pan (no fat required, it is already in the dough). Pour a small ladle of dough into the skillet, rotate the dough over the entire surface. Place on the fire and when the pancake circumference turns light red, it is time to turn it over.
6 Let cook for about one minute on this side and the crepe is ready.
To end up.Slide crepe out of skillet and repeat with remaining batter. (Coat pan with butter as needed.)
